Butternut Squash Carrot Soup

Soup is an easy way to add in lots of nutrient dense foods and since everything is liquid, it’s even easier to digest for the gut!

I am a firm believer in having at least one meal a day that is pureed or liquid when you are on a healing journey (and your digestive symptoms are more intense). It’s been one of the most beneficial things I’ve been able to do for my gut health. It’s also been a great way for me to sneak in some healing ingredients and just eat something a little bit different.

To be honest, I wasn’t super into warming foods early on, but as I started to heal and feel better – I grew to really crave and appreciate soup.

I hope this soup can soothe some of your gastritis (or even IBS) symptoms and allow you to begin to feel better! Here’s everything you’ll need.

Ingredients

Butternut Squash

Butternut squash is a filling fruit (that’s right, it’s actually a fruit!) loaded with lots of different nutrients and antioxidants. I love using butternut squash in soup because it tends to be better tolerated than potatoes and masks the taste of broth (which I don’t love to drink on it’s own). It’s the key ingredient in this recipe.

Carrots

Carrots are generally a safe staple in every diet. They’re rich in beta carotene and also loaded with lots of different nutrients.

With carrots, I like to make them even easier to digest by washing them with clean, filtered water and peeling the skin off of them. If you have absolutely ZERO energy, you can also grab some organic baby carrots! But whenever you can, try to wash, peel, and cut them yourself.

Broth

For this recipe, I usually use Kettle & Fire’s Chicken Bone Broth. They also offer a vegetable if you’re vegetarian - which is still just as healing and effective.

Broth supports immune system function and is incredibly beneficial for gut healing. However, most store bought bone broth has other ingredients in it that may be agitating to your gut while it is inflamed. I use a small amount of broth in this recipe and dilute it to mitigate any negative reactions. I find that this recipe doesn’t bother my gut, but it actually brings relief.

If you find that this broth doesn’t work for you, you can always homemake your own bone broth. Here’s a recipe you can use.

Optional: Turmeric

Curcumin is the main active ingredient in turmeric.

It also happens to be a natural anti-inflammatory and helps your body fight foreign invaders. It’s got TONS of other benefits (including cancer prevention) but it’s important to know that it reduces inflammation because it can help you reduce yours!

HOWEVER– any spice, turmeric included, can agitate your gut when it is very inflamed. You may want to try this without turmeric first and once you’re eating more regularly, then you can add in the turmeric and see you how you react to it. You could also just try a pinch of it.

Things You Might Need

This recipe doesn’t require a whole lot of tools, but I find these are helpful tools to make your soup:

What You’ll Need

  • 1 Butternut Squash

  • 1 Bag of Organic Carrots

  • 1 Cup of Organic Bone Broth ( this is my preferred brand )

  • High Quality Sea Salt

  • 1 Tbsp Coconut Oil

  • Optional: 1 Tsp Turmeric

How to Make It

  1. Preheat the oven to 400 degrees Fahrenheit.

  2. While the oven heats up, wash your butternut squash thoroughly.

  3. Place a sheet of parchment paper on a baking sheet and the washed butternut squash. Make 3 incisions in the squash so it will bake faster and be easier for you to cut.

  4. Add the butternut squash into the oven for 25 minutes.

  5. While the squash is baking, take your carrots and wash them thoroughly.

  6. Cut the ends off, peel them, and cut them.

  7. Remove the squash from the oven and let it cool. Then, cut the ends off and cut it in half. Add coconut oil to squash and sprinkle with sea salt.

  8. Add the carrots to the sheet with some salt and coconut oil as well.

  9. Place in the oven for another 30-40 minutes.

  10. Remove from oven, let cool, and place ingredients in blender along with bone broth and optionally, turmeric.

  11. Blend all ingredients together until you get a creamy consistency. You may need to add a little bit of water until the ingredients blend smoothly.

  12. Enjoy your soup!
