2 Minute Almond Butter Chia Pudding

Today I wanted to share a quick recipe that’s been saving my sore throat and is actually a healthy, paleo-friendly snack. Chia pudding!

Who would have known chia pudding would be a snack that would actually fill me up? It’s kind of a weird consistency if you’ve never had it before (what I imagine the consistency of caviar would be like), but no fish taste here! ☺️

Just all almond-y goodness with a little bit of honey to coat the throat.

This is a super easy snack you can prepare on Sunday night for the week and just grab and make them as the week goes on. Chia pudding is awesome too because you can top it with any sort of topping you like – think fruit, granola, and even cacao nibs!

My recipe is just modified so you can make more chia pudding at a time.

What You’ll Need

  • 2 Cups of Coconut Milk

  • 3 Tbsp Almond Butter

  • 1 Bag of Chia Seeds

  • 1-2 Tbsp Maple Syrup or Honey

Steps

  1. Add 2 cups of coconut milk to a large mixing bowl.

  2. Add in 10 tbsp of the chia seeds.

  3. Add in 3 tbsp of almond butter.

  4. Add in 1-2 tbsp of the maple syrup, honey, or sweetener of your choice.

  5. Mix together and put in the fridge overnight. Enjoy!
