Gut Healing Creamy Rice Puree

When I was struggling with debilitating nausea, all I could think of was how happy I’d be to eat the most boring, blandest of foods. I was so hungry, I’d eat anything, but I knew just trying to eat “anything” would not agree with my stomach!

In the midst of all my research on what to start eating again after a gastritis flare, I discovered a neat little trick from Bethany Ugarte (@lilsipper).

She suggested having 1/2 cup of greek yogurt mixed with 1/4 cup of cooked rice daily to heal your gut.

After doing a little research, I could see why.

Ingredients

Plain, Greek Yogurt

“UMMM… excuse me, this recipe is NOT dairy free!”

Yes, you’re right.

However, REAL yogurt (not with added sugars or artificial flavoring) contains live bacteria that helps you break down lactose. So, even if you are staying away from dairy or have a lactose intolerance, you can still react well to true, fermented yogurt and it’s actually GREAT for your gut. (And now I just have it with coconut yogurt instead!)

My favorite store-bought yogurt brands are FageNancy’s, and Cocoyo.

(You want to select PLAIN flavors with NO additives. Stay away from gums, thickeners, sweetener, or added sugars. While full fat is more beneficial, some can’t tolerate fats well – so you can start with 0% or low fat and work your way up. Don’t be afraid to experiment!)

White Rice

Grains seemed to be demonized in the health world, but I think white rice gets a bad rap.

Jasmine or Basmati Rice can be much easier to digest for those experiencing nausea and heartburn. It’s classic BRAT diet food and a good source of carbs to help with weight gain after not having eaten in a while.

Bethany Ugarte claims that white rice acts as a “capsule” so the beneficial bacteria from the yogurt can reach our stomach. I’m not sure how true that is and haven’t seen the research to back that up, but it is delicious and filling – so we’ll add it in to our recipe today!

My favorite white rice brand is Lundberg Family Farms Organic Jasmine Rice. It is tested to have the lowest levels of arsenic out of all the jasmine rices!

Tools That Will Help

For this recipe, you’ll need a few things to help you make this delicious creamy rice puree. I’m also dropping links to other tools I mention/show in case you’re interested!

What You’ll Need

  • 3 Cups of White Rice

  • 3 Cups of Filtered Water

  • Sea Salt

  • Plain, Greek Yogurt (or dairy free alternative)

  • Optional: Vital Proteins Collagen

How to Make It

  1. Add water to the Instant Pot first to avoid rice sticking to the Instant Pot.

  2. Rinse rice thoroughly in nut milk bag or mesh strainer. Then, add to Instant Pot.

  3. Turn Instant Pot onto the "Pressure Cook" setting on high. Set time for 8 minutes.

  4. Once rice cooks for 8 minutes, wait 10 minutes and release the pressure release valve.

  5. Put the cooked rice into your blender with water (not too much or it'll turn liquid-y). Optionally, add collagen for added gut healing benefits.

  6. Remove pureed rice and store what you don't use.

  7. Add what you will use to a bowl. Add in sea salt and a few spoonfuls of yogurt. Mix well and enjoy your creamy rice puree!
